Before Pearland, our owner spent years behind the bar in the Gulf's luxury hotels — Head Bartender at The Address Hotels + Resorts in Dubai, and earlier at Gordon Ramsay's restaurants in Doha. That is why the drinks here are mixed to order and balanced rather than sweet, and why the bartender would rather make you the right thing than the thing you half-remember.
